Key Lime Pie Ice Cream
Small,round, cheap, healthy, are just some of the adjectives, used Lemon. But still many remain unaware of the health benefits that this little citrus fruit can grant! This innocuous looking fruit comes packed to the brims with Vitamin C, an important vitamin needed by the body to function normally. But other than Vitamin C it also contains other vitamins in high amounts, such as Riboflavin, Vitamin B, Calcium, Magnesium, Phosphorous and many proteins and carbohydrates.
- 1/2 cup granular sweetener for ice cream*
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 2 cups 2% reduced-fat milk
- 1 cup half-and-half
- 1 egg yolk
- 1 teaspoon Key lime zest
- 1/3 cup Key lime juice
- 1/2 cup coarsely crushed graham crackers
STEP 1- Whisk granular sweetener, cornstarch and salt together in a big saucepan. Slowly whisk in the milk,then cook the batter at sim gas for 10-12 minutes, until the batter thickens, then remove it from the gas.
Step 2– Now whisk egg yolk separately until it also gets thick, add 1 cup hot cream batter in yolk and continue stirring the mixture, then add the yolk mixture into the left hot cream batter and simultaneously keep whisking.
Step3– Now pour the thick batter through the fine wire-mesh strainer into a bowl,cool the batter for 1 hour and meanwhile stir it. Wrap the plastic sheet over the saucepan (with the batter) freeze the mixture for maximum 24 hours.
Step 4– Pour mixture into freezer container of a 1 1/2-qt. Electric ice-cream maker, and freeze it stir in Key lime zest, Key lime juice, and crushed graham crackers halfway through freezing. The yummy, greeny ice cream is ready. Keep the ice cream at room temperature for 5 to 10 minutes before serving. You can garnish it with mint leaves and pineapples.
Banana-Coconut Ice Cream

- 2 cups sweetened flaked coconut
- 1 cup sugar
- 6 egg yolks
- 4 cups milk
- 2 cups half-and-half
- 1 (15-ounce) can cream of coconut
- 2 teaspoons vanilla extract
- 3 ripe bananas, mashed
Garnish: toasted sweetened flaked coconut
Step 1-Bake coconut in a shallow pan at 350°, for 10 minutes, stir it in the intervals
Step2-Now whisk sugar, egg yolks, and milk in a big saucepan over medium flame, keep whisking the batter until mixture thickens and will coat a spoon (do not boil).
Step3– Remove the batter from the gas and whisk in toasted coconut, half-and-half, cream of coconut, and vanilla. Fold in banana. Cover the saucepan and freeze it for 3 hours.
Step 4-Pour mixture into freezer container and freeze it.
Garnish the chilled yellow springy ice cream with toasted sweetened flaked coconut
